Nestled within Mediclinic Newcastle, Lie Vito Coffee Shop’s culinary virtuoso, Chef Cebi Matengwa, unveils her pièce de résistance: the Masala Omelette. Far beyond a mere breakfast, Chef Cebi’s creation beckons you to savour a symphony of spicy flavours and textures, promising a simple morning indulgence that transcends the ordinary and embraces a nutrition-packed culinary odyssey.
Recently, Newcastillian News had the privilege of stepping out of the intense news sector and into Chef Cebi’s flavour filled world, unravelling the secrets behind this delectable breakfast sensation.
Here’s your exclusive guide to recreating this gastronomic marvel in your own kitchen this weekend:
Ingredients (serves 1):
- Three green chillies.
- One green pepper.
- Half of a white onion.
- Two eggs.
- Pinch of salt for taste.
- Half to one teaspoon of your preferred chilli powder or masala.
- ½ a block of cheddar cheese or any cheese of your liking.
- Butter for sautéing the onions, peppers, and chillies.
- (Allow approximately 25 minutes for ingredient preparation.)
Method:
- Finely chop the green chillies and green pepper
- In addition to the chillies and pepper, slice the white onion.
- Beat the eggs in a bowl until properly mixed (remember to not over beat your eggs)
- Grate your chosen cheese
Cooking Method:
Sauté a section of the onions, peppers, and chillies in butter until golden. Add masala/chilli powder and a pinch of salt.
In a separate pan with spray and cook/oil/butter, pour in the beaten eggs. Cook for two to four minutes on low to medium heat.
Once the eggs are cooked, remove from heat, add the sautéed filling, top with grated cheese, fold over, and return to the heat for an additional two minutes.
Plate the omelette and savour it with a slice of toast and a steaming cup of coffee.
But the experience doesn’t end there!
Chef Shamira Fakie of Lie Vito Coffee Shop goes the extra mile, emphasising their commitment to Mediclinic Newcastle’s drive to reduce food wastage. Therefore, Chef Shamira advises composting with vegetable offcuts and eggshells. You could also plant the seeds used from the pepper and chillies to truly ensure zero wastage.
